<p align="center"><font size="3">最底下是荔枝，然后铺一层香兰叶戚风，接着浇上一层椰奶卡士达（custard)</font></p>
<p align="center"><font size="3">再然后铺一层芒果jelly和新鲜的芒果，以此类推</font></p>
<p align="center"><font size="3">说是西点，实际上是改良过的东南亚风味极为浓郁的一款甜品</font></p>
<p align="center"><font size="3">椰奶自不必说，这里还特地用了斑兰叶做戚风</font></p>
<p align="center"><font size="3">斑兰叶是东南亚一种特有的香料，用在很多甜品和食物中，特有的芳香气味为食物增色不少。</font></p>

<p align="center"><font size="3">印尼人热爱它的程度，据说煮饭的时候也要摘一条班兰放进去一起煮，煮好后的饭香气芬芳，也更软熟。</font></p>

<p align="center"><font size="3">而我一直迟疑犹豫着，从去年拖到现在</font></p>
<p align="center"><font size="3">我的烘焙模具比较多，对于新手来说没有太多的参考借鉴价值</font></p>
<p align="center"><font size="3">搞不好反而误导、吓着了她们，以为玩玩烘焙需要这么多器具，</font><font size="3">整一个腐败无疆界</font></p>
<p align="center"><font size="3">其实初次接触烘焙，四五个工具足以烤出美味的蛋糕了</font></p>
<p align="center"><font size="3">只是时间久了，必然会在原有的模具中注入新的元素，</font></p>
<p align="center"><font size="3">这份持久的新鲜，很容易地就伴随你走过了烘焙的一年又一年</font></p>

<p align="center"><font size="3">自2006年用过silicone(硅树脂模)后，我就几乎没有买过其它铝、铁、或nonstick 的模。因为硅胶模太好用了，轻巧、方便、易清洗</font><font size="3">买质量好一些的就可以终生保质。所以以下先来看硅胶模</font></p>
<p align="center"><font size="3">上面是我个人很喜欢的硅胶高温布，可以耐高温到400C,因为一张很大，可以随意剪成小的，我有两张，另一张剪成两块小的，已经用到很旧了。</font></p>

<p align="left"><font size="3">Ekka其实就是布城每年一届的农业展销会兼嘉年华，每年会在昆士兰州的首府布城举办十天左右的show。</font></p>
<p align="left"><font size="3">秀的内容包罗万象：人们在里面玩游乐场、买农副产品、看马术表演、肚皮舞、逛产品展销、零距离接触牛羊马、骡子、骆驼及其它平日难得一见的猫狗禽鱼品种，基本上就是一个大杂烩。像在国内的庙会或赶集。</font></p>
<p align="left"><font size="3">在8月13号这天，政府专门给布里斯班定为公众假日，（show day）。还为Ekka 特开了专门到那里火车线路和公车，好让所有的人都有时间参与。所以8月13号这天，几乎整个布市的人&ldquo;倾巢出动&rdquo;，涌向Ekka。 对一个人口稀少的国家来说，那场面甚为壮观。</font></p>

<p align="left"><font size="3">如果不太了解澳洲文化，乍一看，以为整个秀场很土，呵呵，我觉得还好啦，乡土气息比较浓，但也很符合澳洲人喜欢亲近自然的性情。精致华丽是谈不上的，土的话是有一点，不过人家的土是澳洲的土法，跟咱们的中国红也不一样，算是另一种特色</font></p>
<p align="left"><font size="3">如此大的盛典自然是有来历的。Ekka、Ekka其实是澳大利亚人的土叫法，这场秀的正式名字叫　Royal Queensland Show (昆士兰皇家博览会)，早在160年前(1851年)就有了，当时主要是作为农业博览会来展示新发明的农业、工业产品，例如多功能耕作机、播种机等等。农场的牛马羊等动物也会被牵来参展，评级；此外还有新品种的水果等。为了吸引更多的人，许多其它领域的元素也慢慢注入Ekka　show ,刺激的游乐场嘉年华就是很成功的元素之一。</font></p>

<p align="left"><font size="3">现场还有剪羊毛、订马蹄比赛的宣传活动.为了提高展销会的质量,吸引大众的目光，名狗,名猫,名羊,名牛,甚至名猪类的都可以看到，俨然一个小型动物养殖场。</font></p>
<p align="left"><font size="3">人性化的展览更是使小孩子们有机会近距离接触动物，在这里你可以触摸闻名世界的澳羊.羊毛贼厚实、贼多脂，小朋友们玩得不亦乐乎，也算是寓教于乐吧</font></p>
<p align="left"><font size="3">剪羊毛可是一件技术活，曾在有关报道上看到，在这里，剪一只羊毛可得600人民币（100澳币），手艺好的年轻人一天可以剪子10只羊，所以，即使不上名校，他们也能过上比白领更滋润的生活。</font></p>

			<title>最近的新宠----彻底的芝麻戚风</title>

<p align="left"><font size="3">虽然以前的黑芝麻粉戚风做过很多次，但是这个新宠，我将黑芝麻、白芝麻、芝麻酱、芝麻油全都用上了，所以称其为彻底的芝麻戚风。</font></p>
<p align="left"><font size="3">黑白芝麻的和粉的比例接近1:1，加上有芝麻酱和芝麻油做铺垫，所以吃起来满口芝麻味</font></p>
<p align="left"><font size="3">黑白芝麻要事先要炒过，这样才会特别香，磨成粉的时候我磨到半碎，这样蛋糕里就可以嚼到粒粒芝麻，</font></p>
<p align="left"><font size="3">烤的时候我比平日要长一点点，虽不是润戚风的口感，但是这种很有特色的嚼劲我个人特别喜欢</font></p>

<p align="left"><font size="3">A：黑芝麻 30g　白芝麻 30g 低筋面粉65g （先将低粉过筛三次，不包括芝麻，然后加入磨碎的芝麻）</font></p>

<p align="left">&nbsp;<font size="3">将蛋黄和部份白砂糖搅打，至糖化后再加入剩下的糖，打发乳化蛋黄至颜色变淡，分两次加入芝麻酱和芝麻油的混合物，然后加入热水搅打，这时液体变稀，表面出现许多小泡沫。</font></p>

<p align="left"><font size="3"><img style="FLOAT: left; MARGIN: 0px 10px 10px 0px" alt="1-3.jpg 1 picture by Mulan-Jane" src="http://i107.photobucket.com/albums/m304/Mulan-Jane/Chiffon%20Cakes/1-3.jpg?t=1218515179" />取手提电动搅拌器打发蛋白，先用低速档，至出现大量泡沫时开始加入柠檬汁（如果手边没有的话就用塔塔粉代替），蛋白呈现温性时开始分次加入白糖，打发蛋白至湿性至中性之间（因为芝麻糊的油性很大，面糊也比较稠，所以这里的蛋白我打到这种状态，如果打到干，搅拌的时候就很容易失败了。</font></p>
<p align="left"><font size="3"><font size="3">当然，这是就戚风模而言的，如果是用普通的原模，做法上可能会有出入，请大家根据自己做戚风的经验以及自家的烤箱做调整,如果是用的中间有烟囱的戚风模，我试过多种不同程度的打发，就这款芝麻戚风而言，左图的样子是我个人认为比较理想的。搅拌时不容易消泡，入炉后膨胀度也很不错，（原理可以看以前的<a href="http://jane-huang912.blog.sohu.com/94270734.html" target="_blank">咖啡戚风</a>）有人可能会采取多加蛋白的方法，但我个人变为蛋白多了，膨胀度是好了，但相对而言就会稀释芝麻蛋糊的味道，烤出来的蛋糕味道就不会那么香浓了。</font></font></p>

<p><font size="3">我的本意，是不想让大家花时间留言，</font></p>
<p><font size="3">我非专业西点师，做为业余爱好者，水平也是半桶水不到，个别东西写得比较详尽是因为我对它有兴趣，了解完之后自然会想将理论付诸实践，做出来玩玩，</font></p>
<p><font size="3">玩玩也占了不少时间，所以自然不能白玩，照片+文字的blog方式就是很好的记录方式，所以就这么坚持下来了。</font></p>
<p><font size="3">跟有同样爱好的朋友交流我是很乐意的，但我写日志不是为了教大家做什么，我的功力不足、手艺不精、 很多专业些的概念自己也很朦胧，</font></p>
<p><font size="3">常有人问一些我也不太懂的问题，想到问者是出于一份信任，我总会在私下里翻翻书，查查资料，尽量把完整、全面的信息告诉对方;我想我得谢谢她们，通过这种方式，我懂得了不少原先自己也很模糊的东西。</font></p>

<p><font size="3">可惜我能花在这份爱好上的时间越来越少了，看我最近玩戚风，突然对它有兴趣是一点，</font></p>
<p><font size="3">但还有非常重要的一个原因，就是相较于其它蛋糕，它所花的时间几乎可以忽略不计，</font></p>
<p><font size="3">最近的戚风就跟闹钟一样，每次都会催我早点起床，大多数都在出门前就已经出炉倒扣的</font></p>
<p><font size="3">我从2005年开始写blog，当时从字面上了解就知道它是网络日志，所以只是拿来写写个人日记</font></p>
<p><font size="3">直到有天喜欢上焙焙，在论坛里找资料才发现原来blog可以这样写，原来热衷于烘焙的人这么多</font></p>
<p><font size="3">Blog的留言是礼尚往来的，所以现在写日志于我已成了一种负担，</font></p>
<p><font size="3">就像转螺丝钉，转得愈深愈吃力，放下呢，有点不甘心，不松手呢，已经有点心有余而力不足了</font></p>
<p><font size="3">我晓得有些朋友很义气，我写的文章即使并不怎样也都要留上好大一段言，但我的时间支配不允许我做同样热忱的回访和关注，否则会弄得自己很疲惫</font></p>
<p><font size="3">所以很多日志我还是会关闭评论，偶尔开放的，是因为适当的交流于我仍是一份很大的收获、乐趣和学习。</font></p>
<p><font size="3">那些会回头看我的朋友，其实只要偶尔的一句发自内心的话，我都会放在心上，感动良久；&nbsp;&nbsp;</font></p>

<p align="left"><font size="3">清晨早起做一个，晚上睡觉前再做一个，总以为熟能生巧，巧能生精嘛</font></p>
<p align="left"><font size="3">而且配方都印在脑子里了，从动手到完成也就二十分钟左右的光景，</font></p>

<p align="left"><font size="3">可是哩，煎一份就狂用四个蛋，也不怕胆固醇高，明显跟俺对着干嘛</font></p>

<p align="left"><font size="3">于是我把鸡蛋藏起来不让他看到，让他自个儿想办法弄别的东西吃</font></p>

<p align="left"><font size="3">在我准备材料的时候忱头蹬蹬跑下楼，打开冰箱没看到他想找的鸡蛋</font></p>

<p align="left"><font size="3">&rdquo;嗯&quot;...!我犹豫了２秒钟后这个嗯就算回答了他</font></p>

<p align="left"><font size="3">4:</font><font size="3"><font size="3">&nbsp;分次加入水，这时液体变稀，表面出现许多小泡沫</font></font></p>

<p align="left"><font size="3">7:取1/3蛋白到蛋黄中，拌开面糊至均匀，将拌匀的面糊重新倒入剩余的蛋白霜中，搅拌均匀，搅拌的手法很重要，戚风蛋糕的搅拌手法不能简单的划圈或任意搅拌，要避免消泡保持蛋糕的膨胀度就得尽量从底部往上翻）</font></p>
<p align="left"><font size="3">加入材料Ｃ，快带搅拌均匀。因为乳酪和海苔的油性大，极易造成蛋白的消泡，所以动作务必快而轻，</font></p>
<p align="left"><font size="3">8:倒入面糊，（因为加了很多料，所以上图中落下的面糊绸缎感不是很强（参考图在<a href="http://jane-huang912.blog.sohu.com/94843524.html" target="_blank">这里</a>。）然后将面糊抹平，端起模在桌面上震几下，震出表面下的大气泡，</font><font size="3">170C 35分钟。</font></p>

<p align="left"><font size="3">我是一个较忙的人，但却能常常吃到自己做的美味面包，原因不外有三；</font></p>
<p align="left"><font size="3">第一：疯狂的做包精神。</font></p>
<p align="left"><font size="3">第二：时间管理（Time Management）-----------时间再少，挤一挤总还是有的，看你如何统筹计划，合理分配了。</font></p>
<p align="left"><font size="3">第三：让面团配合你的作息时间。也是我主要想分享一下的的东西。</font></p>
<p align="left"><font size="3">让面团配合你的作息时间，听起来很人性化，其实操作起来也很简单。我常用的方法有三：</font></p>
<p align="left"><font color="#0000ff" size="3"><strong>第一种，低温冷藏发酵。(扎袋封口限制发酵法）</strong></font></p>
<p align="left"><font size="3">低温冷藏发酵的方法已屡见不鲜，这里采用的是扎紧口袋以防发酵过度的方法，低温发酵，一来酵母可以慢慢酝酿好味道，其次取用面团更灵活，在接下来的1-3天内随时都可以取用，这样的面团真是好脾气到没棱没角，而且做出来的面包柔软度好，风味也更佳。所以这种方法曾在台湾的一些论坛上备受推崇。</font></p>

<p><span><font size="3">1:取一个塑料袋在塑料带里刷一层油或喷一层油，然后装入已经打好的面团，把袋子的空气尽量全都排出去，然后扣牢袋子</font></span></p>
<p><span><font size="3">2:在袋子标签处注明面团的种类和名称和时间（以防混淆）</font></span></p>
<p><span><font size="3">3:绑好的面团可以扔过冰箱冷藏室，让它在低温的状态下慢慢发酵，之后的24小时到3天之内（如果袋子破了等意外出现或面包的封口工作做地不好，则要尽量在24小时内用掉。</font></span></p>

<p><span><font size="3">打好的面团在冰箱冷藏室还是会慢慢继续发酵，只是在低温下，酵母的活性比较低罢了。当然这也得看你的冰箱的设置。理论上讲，酵母在摄氏1-4度的时候是处于睡眠状态的，如果你的冷藏室的温度，设得很低，也有可能会发现一夜过后面团几乎没怎么长大。</font></span></p>

<p align="left"><span><font size="3">如果打好的面团在接下来的很长时间内才会用到，此时，就可以启用冷冻保存面团了。将打好的面团用上面同要的方法装袋在冰箱冷冻室，要用的时候取出置室温下解冻，然后继续进行平日做包的程序即可。急着要用的，也可以将面团连同袋子放入温水中加速度解冻（记得袋子不能漏水哦）</font></span></p>
<p align="left"><span><font size="3">如果有时间，也可以早些安排，将冷冻室的面团取出放到冷藏室，任它发个大约12-24小时至面团两倍大时即可取出进行后续操作。（这样的面团在冷藏里可以放到三天不会坏）</font></span></p>

<p align="left"><font size="3"></font>&nbsp;<font size="3">既然面团可以打好进冷冻室，自然也就可以整型完再冻起来。对于绝大多数面包来说，当天食用是最好的，时间的流逝会加速面包老化的程度，&mdash;&mdash;尤其是做的不好的面包，最好出炉后不久就得快点消灭，不然时间再久些，就会更难吃。</font></p>
<p align="left"><span><font size="3">想食到自己的手工放心面包又没有时间一次次的搅打面团？</font></span></p>
<p align="left"><span><font size="3">这个时候，将整型好的面包冷冻保存就再好用不过了，而且尤其适用于很多中式面包</font></span></p>
<p align="left"><span><font size="3">容我对中式面包认识浅薄，我个人觉得好些花样面包其实可以用同一个面包底，内陷变化下，看上去就已脱胎换骨。</font></span></p>
<p align="left"><span><font size="3">所以可以趁哪天有时间，一次性打多几份面团，将整型好的面包按上面同样的方法扔进冷冻室保存，要吃的前一天取出移到冷藏室，任它发约12-24小时约2倍大（也看你冰箱的温度设置啦，温度若设地很低，需要的时间自然要长些），</font></span></p>
<p align="left"><span><font size="3">早上起来，取出，放在室温下醒约20分钟，聪明如你，这个时候自然会打开烤箱预热然后再去洗把脸啦</font></span></p>
